We blend various floral sources of honey to meet customer taste requirements and specifications. Our proprietary and popular bakery blend, Mel-O® Blend #4, is an extra light amber color, low in moisture, and rich in flavor.

Mel-O® Blend #4 provides the proper humectancy and viscosity, which eliminates dryness and crumbliness in baked goods. It naturally coats, binds and thickens products such as salad dressings. Many of our customers, including the finer restaurants and bakeries, have specified our Mel-O® Blend #4 in their recipes because of its richness in flavor and its ability to prolong product shelf life.

MEL-O® Custom Blends
Mel-O® Blend #03	A premium white light colored honey used for table top servers and retail packages. Used by some industrial ingredient users who specify a clover taste in their products.
Mel-O® Blend #04	An extra light amber honey with a Clover and mixed flower taste used primarily by the baking trade where a lighter color for breads and milder flavor is desired versus a light amber honey.
Mel-O® Blend #05	A light amber color, low in moisture and rich in flavor. First choice by master bakers, brewers, and salad dressing processors.
